I made keema puff pastries using the leftover aloo keema. They are always a hit with everyone! We also had leftover peri peri chicken pasta & aloo keema with roti. Of course watermelon to finish with.

We always feel we can’t eat too much after a whole day of fasting and the food ends up being leftover. Also, I think we end up focusing too much on food in Ramadan and not really on the actual purpose of Ramadan. So each year I’ve reduced the amount of time I spend in the kitchen during Ramadan.

First up is the @oreo milkshake, which is not just utterly delicious but also super quick to make.
.
.
Here’s what you need;
250g vanilla ice cream
1 pack of Oreos (150g approx)
1 tsp vanilla extract (optional) 
1 litre of milk 
Whipped cream/squirty cream can
Crushed Oreo biscuit .
.
What you need to do;
1. Add the ice cream, Oreos, milk and vanilla extract to a blender and blitz until the biscuits are smooth. 
2. Pour into a glass and top with lots of whipped/squirty cream and top with crushed Oreos.
.
.
Tip:
- To make the glass look pretty for special occasions - melt some chocolate and drizzle it inside the glass. Let it harden and then pour the milkshake in.
- You can add ice cubes when blitzing everything together if you’d like an extra cold milkshake. .
- If you’d like a thicker milkshake use less milk and more ice cream. .

Brownie anyone? Gooey & fudgy! Here’s the recipe for you all to give these brownies a go! 
.
.
What you need;
185g unsalted butter 
185g good quality dark chocolate 
85g plain flour
50g cocoa powder
100g milk chocolate
3 large eggs
275g golden caster sugar
.
.
Method;
.
.
1. In a heatproof bowl add the butter and dark chocolate. Cover it with cling film and microwave for approx 2 mins until the chocolate has melted. Remove from the microwave and mix and leave to cool for around 10- 15 mins. 
2. Pre-heat your oven to 180°/gas mark 4
3. Grease a 20cm square tin and line the bottom with greaseproof paper making sure some of the paper hangs off the edges (this will help you pull the brownie out of the tin after baking)
4. Sieve the plain flour and cocoa powder to remove any lumps. 
5. Chop the 100g of milk & dark chocolate into chunks.
6. Add the eggs & the sugar into a large bowl and whisk together for approx 5-8 mins until the mixture is pale in colour and doubled in size. 
7. Next pour the melted cooled chocolate over the eggy mixture and using a spatula carefully fold the chocolate in until well combined. Be sure to mix gently to avoid knocking the air out of the mixture.
8. Now, sieve the cocoa powder & flour into the mixture and again carefully fold it in using a spatula.
9. Add the chopped chocolate and fold it in.
10. Spoon the mixture into the greased baking tin and gently spread the brownie mixture into the corners and flatten the top.
11. Bake in the oven for approx 25 mins. After 25 mins remove from the oven and shake the tin. If it wobbles then continue baking for another 5-10 mins until the top has a papery crust. 
12. Remove from the oven and leave the brownie to cool in the tin. 
13. Once cooled remove the brownie from the tin and using a sharp knife cut the brownie into squares. 

Tip;

- For a yummy dessert try the brownie hot from the tin with some ice cream! 
- Make sure you use good quality chocolate and butter 
- To ensure you have a clean cut when cutting your brownies make sure the brownie is completely cooled.

With Ramadan around the corner, I’ll be sharing some of your favourite recipes for you to save and make. To save click the little flag under the photo.

Spicy Keema kebabs, these are so quick and easy to make and oh so yummy! .

Here’s what you need;

500g mutton mince with some fat
2 medium onions
15 green chillies (add more or less according to your taste)
Bunch of coriander
1 tbsp cumin seeds
1 tbsp salt (adjust to your taste)
1 bulb garlic
1 inch ginger
3 tbsp gram flour

What you need to do;

1. Add the onions, chillies, coriander, garlic & ginger to a chopper and blitz until all finely chopped.
2. Next add half the mince to the chopper and blitz until it forms a ball in the chopper. Remove the mince and do the same with the remaining mince.
3. Mix the mince with the chopped onion, chilli, coriander, garlic & ginger. Add the cumin seeds, salt & gram flour and mix well until everything is well combined. Leave in the fridge for approx
30mins – 1 hr.
4. Remove the mince from the fridge. Wet your hands with some water and take a small amount of mince and make into a ball. Then using the palm of your hands flatten the ball into a disc. Do this with all the mince.
5. Heat up a frying pan with oil and shallow fry the kebabs for 2-3 mins on each side on a medium heat. The kebabs should have a nice caramelisation on each side. You can bake them in the oven too on gas mark 7 for 25 – 30 mins turning over halfway.

Serve with ketchup or coriander chutney and a salad or put into burger buns/pitta bread and enjoy with mayo and salad.

Spicy chicken popcorn

What you need:
For the marination;
250g boneless chicken (breast or thigh) cut into small pieces
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red chilli flakes
1 tbsp vineger
1 tbsp soya sauce
4 cloves garlic crushed

 For the batter...
 3 tbs white flour
 1 tsp baking powder
 1 egg
 Pinch of salt
 Pinch of black pepper
 1/2 tsp crushed red chilli flakes
 1 tbsp soya sauce
 1 tsp vineger
1/2 tsp sesame seeds
 water 2 make a thick batter - it should stick to the chicken without coming off

 Oil for deep frying

 Method:

 1. In a bowl add the chicken and all the marination ingredients. Mix it together well and set aside for 3-4 hours. Overnight marination is better.

 2. Just before frying make the batter in a bowl. Mix the flour and water together in a bowl to make a thick paste.

 3. In another bowl whisk the egg and add the salt, pepper, vinegar, crushed chillies, sesame seeds, soya sauce and baking powder. Mix all together. 

 4. Slowly whisk in the egg mixture into the flour mixture and mix well.

 5. Heat the oil. 

 6. Dip the chicken pieces one by one into the batter and deep fry on a medium heat until cooked approx 5-7 mins. Turn the chicken over occasionally.

 7. Turn the heat up at the end to high to make the chicken popcorn crispy.

 8. Remove from frying and put on kitchen towel to drain oil.

 Done!

 These are really yummy eaten on their own or served on the side with rice.

 Tips:

 - if you don't want the popcorn to be hot and spicy, then do not add the crushed red chillies.
- when you drop the chicken into the hot oil don’t move it for a min or so until the batter starts to firm up and start to turn a little golden in colour.

Pesto, cheese & sundried tomato puff pastry tart. 
.

I luuurve ready rolled puff pastry. It’s one of my favourite ready made ingredients and I always a couple of packs in the fridge and when I don’t have much time then puff pastry to the rescue.

What you need;
Ready rolled puff pastry sheet
Pesto
Cheddar cheese
Grated mozarella cheese 
Sundried tomatoes
Cherry tomatoes
Basil leaves 
Salt & pepper 
.
.
What you need to do;
1. Preheat your oven to gas mark 6.
2. Unroll your pastry sheet and leave it on the greaseproof paper that it comes with. 
3. Spread pesto over the puff pastry sheet leaving approx 1cm around the edges.
4. Sprinkle over the cheese.
5. Add cherry tomatoes and chopped sundried tomatoes & season with salt & pepper.
6. Place onto a baking sheet & bake in the oven for 20-25 mins.
7. Remove from the oven and add the basil leaves.

Slice & enjoy!

This year although strange has also been a blessing. I’ve slowed down, I’ve focused on myself (for once) and have started a journey of healing and self awareness.
