Spicy chicken popcorn

What you need:
For the marination;
250g boneless chicken (breast or thigh) cut into small pieces
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red chilli flakes
1 tbsp vineger
1 tbsp soya sauce
4 cloves garlic crushed

 For the batter...
 3 tbs white flour
 1 tsp baking powder
 1 egg
 Pinch of salt
 Pinch of black pepper
 1/2 tsp crushed red chilli flakes
 1 tbsp soya sauce
 1 tsp vineger
1/2 tsp sesame seeds
 water 2 make a thick batter - it should stick to the chicken without coming off

 Oil for deep frying

 Method:

 1. In a bowl add the chicken and all the marination ingredients. Mix it together well and set aside for 3-4 hours. Overnight marination is better.

 2. Just before frying make the batter in a bowl. Mix the flour and water together in a bowl to make a thick paste.

 3. In another bowl whisk the egg and add the salt, pepper, vinegar, crushed chillies, sesame seeds, soya sauce and baking powder. Mix all together. 

 4. Slowly whisk in the egg mixture into the flour mixture and mix well.

 5. Heat the oil. 

 6. Dip the chicken pieces one by one into the batter and deep fry on a medium heat until cooked approx 5-7 mins. Turn the chicken over occasionally.

 7. Turn the heat up at the end to high to make the chicken popcorn crispy.

 8. Remove from frying and put on kitchen towel to drain oil.

 Done!

 These are really yummy eaten on their own or served on the side with rice.

 Tips:

 - if you don't want the popcorn to be hot and spicy, then do not add the crushed red chillies.
- when you drop the chicken into the hot oil don’t move it for a min or so until the batter starts to firm up and start to turn a little golden in colour.

Pesto, cheese & sundried tomato puff pastry tart.

I luuurve ready rolled puff pastry. It’s one of my favourite ready made ingredients and I always a couple of packs in the fridge and when I don’t have much time then puff pastry to the rescue.
.

What you need;
Ready rolled puff pastry sheet
Pesto
Cheddar cheese
Grated mozarella cheese 
Sundried tomatoes
Cherry tomatoes
Basil leaves 
Salt & pepper 
.
.
What you need to do;
1. Preheat your oven to gas mark 6.
2. Unroll your pastry sheet and leave it on the greaseproof paper that it comes with. 
3. Spread pesto over the puff pastry sheet leaving approx 1cm around the edges.
4. Sprinkle over the cheese.
5. Add cherry tomatoes and chopped sundried tomatoes & season with salt & pepper.
6. Place onto a baking sheet & bake in the oven for 20-25 mins.
7. Remove from the oven and add the basil leaves.

Slice & enjoy!

This year although strange has also been a blessing. I’ve slowed down, I’ve focused on myself (for once) and have started a journey of healing and self awareness.

This year has taught me to enjoy my daughters and build memories with my girls and hubby and just enjoying the simple things in life.

Tonight I made a grazing table for us to munch on and sit and watch movies together. I love making grazing tables and boards & something I’d love to do more of! Here’s a list of the things I added;

Pakoras, samosas, tex mex dips, olives, cucumber, cherry tomatoes, a range of crackers, Doritos crisps, Pringles, smoked salmon, bagels, grapes, strawberries, donuts, cookies, pancakes, Nutella jars & a range of different cheeses.

If you’ve been watching my stories you’ll know I’m trying to get fitter over the last couple of months and have been doing a step challenge with you all. Today I’ve broken my record and have managed 25,000 steps today 🙌🏽 Join me on Monday with my #mazadaarstepchallenge over on stories!

So, when it came to dinner this evening, I wanted to cook something quick, healthy & yummy! Today’s dinner was couscous, baked salmon & a side salad. Find the recipes for all 3 below 👇🏽

.
🍴SALMON; place the salmon on a sheet of foil. Add 1/2 tbsp light soya sauce and 1 tsp siracha chilli sauce & coat the salmon in it. Then wrap the salmon in foil and bake on gas mark 7 for 12-15 mins.
.
. 
🍴 COUSCOUS for 3-4; Firstly, dissolve 1 chicken or veg stock cube in 650ml of water. Set aside. 
In a pot add 2 chopped spring onions & 1 chopped red pepper. Spray some oil on the spring onion & pepper & sauté for a few mins until soft. Next, add 250g couscous, 1 tbsp pepper paste, 1 tbsp tomato purée, 2 tbsp Nando’s peri peri medium sauce, 1/2 tsp turmeric powder - mix everything together until combined. Pour over the stock, cover and leave to cook in the stock for 12-15 mins with the heat turned off. After 15 mins remove the lid & fluff up the couscous using a fork.

🍴 SALAD FOR 2; Take half a cucumber and cut it in half lengthways. Using a spoon scrape out the middle part & slice. Quarter around 10 cherry tomatoes. Chop an avocado. Peel & slice a carrot. In a large bowl add the cucumber, cherry tomatoes, avocado, carrot, mixed salad leaves & pomegranate. Season with pomegranate molasses, a sprinkle of sumac, squeeze of lime juice & salt. Mix everything together.

Tonight’s dinner was inspired by the Pakistani bun kebab - if you know you know 😋. The bun kebab is like the Pakistani McDonald’s but better! It’s a shami kebab, which is made of meat and lentils and coated in egg then fried. Served in a bun with chutney, ketchup, mayo and sold on the streets of Pakistan.

For the dip I used 2 tbsp creme fraiche, 2 tbsp natural yoghurt, 1/2 tsp garlic salt & dried chives. Add everything to a bowl & mix.

One of my favourite ingredients EVER is eggs! What a beautiful thing they are. So many ways you can cook them, you can make a quick meal with them, they’re filling and a good source of protein. 
.
.
Tonight’s dinner was khagina - spicy onion & scrambled eggs. Served with a hot roti & some chilli pickle makes a delicious simple dinner. This makes a great meal for breakfast with parathas too! 
.
.
Here’s what you need; 
1 onion thinly sliced
5 eggs
1 tsp salt 
1 tsp Kashmiri Chilli powder 
1 tsp cumin powder
1 tsp coriander powder 
1 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp garam masala 
2 green chillies chopped 
Small bunch coriander chopped 
Few tbsp of cooking oil

What you need to do;
1. Heat the oil in a pot and add the onions, fry until they are soft and translucent.
2. Next add the salt, chilli powder, cumin powder, coriander powder, cumin seeds & turmeric powder. Fry for a few mins. 
3. Now crack the eggs into the pot and add the green chillies. Stir the eggs until they’re scrambled and cooked through on a high heat.
4. Garnish with coriander and garam masala.

Serve with hot roti and chilli pickle.

Russian salad, a hugely popular salad in Pakistan. In Pakistan they make this with combination of sweet and savoury flavours and it tastes amazing! .

The salad originates from Russia and is called the ‘Olivier’ salad and they use vegetables, egg & meat to make the salad. However, Pakistanis have made their own version by combining vegetable and fruits.
.
.
I have my own version of the things I like to add and here’s what you need;
.
.
150g boiled macaroni/pasta 
200g carrots cubed & boiled
200g potatoes cubed and boiled
100g peas boiled
200g pineapple chunks 
200g apples chopped
100g grapes
1 cup mayonnaise 
150ml double/single cream
2 tbsp icing sugar
1 tsp salt (adjust of more needed)
1 tsp black pepper
1 tsp white pepper .
.
Method;
1. In a large bowl add the mayonnaise, cream, salt, icing sugar, black pepper & white pepper and mix until all combined.
2. Next add all the fruits, paste and vegetables and mix until everything is coated well.
3. Leave in the fridge to cool and enjoy cold. .

This keema karahi is made using boneless meat that is cut into mince by hand (or an electric chopper). It tastes totally different to the mince you get at the butchers and once cooked tastes amazing!
