One of my favourite things to cook and eat is chicken karahi. I’ve recently bought an iron karahi (wok) to cook my karahis in and they cook perfectly.

If you’ve watched people cooking karahis on the streets of Pakistan you’ll see that they all use these iron karahis. An iron karahi is great as it can take high heat & it will cook food evenly and consistently.
.

Anyone else love scraping all that masala off the sides with roti?! That’s the best bit to a karahi!

⭐️ ORZO PASTA SALAD ⭐️

Who doesn’t love a salad in the summer. I love them but I do like to mix them up a bit otherwise the same ones can get a bit boring. I made this orzo pasta salad for our Eid bbq last week and it was really yummy.

What you need;
250g orzo pasta boiled
10-12 cherry tomatoes cut into quarters
1/2 cucumber cut into small chucks with the the middle seed part removed
100g feta cheese
3 spring onions chopped
Handful fresh parsley chopped
.
.
For the dressing;
In a blender add 100ml extra virgin olive oil, 1 tsp mustard, 50ml white vinegar, pinch of salt and pepper. Blend together until fully emulsified. You can make this in advance and keep it in the fridge.
.
.
What you need to do;
In a large bowl add the orzo pasta, salad, feta cheese & parsley along with the salad dressing and mix well until everything is well combined. You can add more seasonong if you wish.
.
.
Serve cold as a side or have as a main for lunch. This can be made beforehand and stored in an airtight container in the fridge.
.
.

Simple food is the best food, Alhumdulillah! Sabat masoor daal with boiled rice and lime pickle for dinner tonight 😋This is one my quick go to dishes to cook when I don’t have much time. There are two parts to cooking this daal. The boiling part and the tarka part.

What you need:

1 cup Brown lentils washed and rinsed
1 bulb of garlic crushed
2 litres of water
1 tsp salt
1 tbs coriander powder
1 tbs cumin powder
1 tsp cumin seeds
1 tbs red chilli powder
1 tsp red chilli flakes
1 tsp turmeric powder
1 tbs garam masala
4-5 tbs oil
1 chicken cube
2-3 green chillies
200g unsalted butter
Small bunch Chopped coriander

Method:

Boiling Process:

1. In a pressure cooker add the lentils, water, turmeric, chilli powder, salt, cumin powder, coriander powder & chicken cube. Pressure for 10-15 mins from when the whistle starts blowing on the cooker.
2. Remove the lid after releasing the pressure and continue cooking on a medium heat. Using your wooden spoon mash some of the lentils by pressing them against the pot. This will help thicken your curry.
3. Keep this simmering on a low heat.

Tarka:

1. In a seperate frying pan add the oil and butter and heat.
2. Add the crushed garlic, chilli flakes, green chillies and cumin seeds and fry for 1-2 mins on a high flame.
3. Add this to the lentils that you have boiled separately in the other pot.
4. Taste your seasoning add more salt if required.
5. Add chopped coriander and the garam masala & simmer on a low heat for 5 mins.

Tips:
– You can cut down the green chillis if you want less heat.
– If you don’t have a pressure cooker then you can use a Deep cooking pot. Follow the same process as step one and cook until the water has reduced and the lentils have thickened and softened. This should take approx 25-30 mins.
– When you add the tarka to the lentils if you would like a runnier consistency, add 1/2 glass of water or keep simmering for a thicker texture.

My eldest daughter loves baking these cheese puffs. They are super quick to whip up and make the perfect snack, lunch, picnic item. .
.
Here’s what you need;
125ml milk
1 egg lightly beaten
2 cups grated cheese of your choice
160g Self raising flour
2 spring onion chopped
6-8 chopped cherry tomatoes
Sprinkle of mixed dried herbs
1/2 tsp salt
.
What you need to do;
1. Pre-heat your oven to gas mark 6/200°
2. Mix the egg and milk together.
3. Add the remaining ingredients to a bowl and mix together until fully combined.
4. Line a baking tray with grease proof paper and using a tablespoon drop the mixture onto the lined tray.
5. Place the tray into the tray on the top rack and bake for approx 20 mins until lightly golden brown. .

Tips;
- you can add spinach, mushrooms and other veg.
- why not try adding some meat such as bacon, chicken slices, ham, etc. (You can get halal versions of these from supermarkets)
- try using a stronger cheese for added flavour.
- my daughter managed to make 8 with this recipe .

Mutton Karahi is so good and the longer it cooks the better the flavour. However, I must admit sometimes I don’t have the time and so I use a pressure cooker to make things a little quicker and easier.

Tonight’s dinner was soo good Alhumdulillah. We had buttered roti topped with aloo palak (potato & spinach curry).

Spinach is a superfood and is so underrated! It’s packed full of vitamins A, C & K. It’s full of iron, magnesium & calcium.

Adding spinach to your diet can help maintain good eyesight, a strong immune system, healthy bones and studies have shown that spinach has cancer protecting properties!

I’m just about to tuck into my rose & pistachio milk cake and put my feet up! On our Eid menu today we had channa pilau, aloo gosht and we also had a bbq and made peri peri chicken wings, chicken tikka & lamb chops. For dessert we had rose & pistachio milk cake & pineapple milk cake. We also had a little pic n mix for the kids. Alhumdulillah.

Alhumdulillah iftar day 16 - today’s iftar was a fishy one but a seriously yummy one!!
.
.
I’ve been wanting mash for aaages so that’s what I had! For iftar today we had mash potato, pan fried asparagus, pan fried smoked haddock with a lemon and dill sauce. I also made some Cajun potatoes for the ones who didn’t want mash. We also had some sushi as a side.
.
.
The lemon & dill sauce - I sautéed some chopped spring onions in butter, added some cream and let it simmer so that it thickened. Then seasoned it with some lemon juice, dill, salt & pepper.
.
.
The haddock and asparagus I pan fried in butter.
.
.
The mash - peel & quarter potatoes. Boil them in some salted water, drain and leave them in the strainer for 5 mins (this let’s of steam and helps your potatoes not be waterlogged). Then put the potatoes back into the pot and keeping the heat on low add some cream, milk, butter, salt & pepper & mash until smooth and creamy. Keep the heat on for 3-4 mins on low to help the mash become creamier and less soggy. The more cream and butter you add the more creamier it will be. You can also add mustard, chillies, cheese, etc to change up the flavours of the mash.

We had pasta in tomato sauce with pecorino cheese & rosemary, garlic bread from @tescofood , corn on the cob, salad, lots of dips & chocolate & caramel dessert.

Hands up if you love pakoras!! 🙌🏽

This Ramadan I haven’t made any but think I may have to at the weekend!
.
.
What you need;
2 cups besan (gram flour)
2tbsp cumin seeds
2tbsp coriander seeds
3 tbsp dried methi (fenugreek)
2 tsp salt
1 tsp baking powder
5 medium sized potatoes
Handful of baby spinach
1 large onion
Bunch of coriander
Oil for deep frying

Method;
1. In a bowl add the gram flour, cumin seeds, coriander seeds, methi, salt & baking powder and mix everything together until well combined.
2. Next add a little water at a time until you have a thick consistency of batter. The batter shouldn’t be too runny and should stick to a spoon.
3. Add the sliced potatoes, onion, spinach & coriander and mix until everything is coated well. Leave to rest for 10-15 mins
4. Next heat a large wok of oil. Using a spoon drop the pakora mix into the oil. Try not to overfill the wok. Do not be tempted to move the pakoras and leave them to cook. They will float to the top once they’ve cooked for 1-2 mins and then flip over. Cook for 4-5 mins until a lovely golden brown.
5. Remove from the oil and drain on some paper.

Serve with some chutney or ketchup.
