This is one of our winter staples. It’s healthy, low in calories and great if you have a cough, sore throat, a cold or generally feeling under the weather.
My recipe uses whole spices and ingredients that have great healing qualities for the body. If you can use organic chicken then that is even better!
What you need;
500g chicken (organic is better)
1 large onion
5 cloves of garlic
1/2 inch ginger
1 tsp salt
1 tbs whole cloves
1 tbs whole cumin seeds
1 tbs whole black pepper
4 black cardamoms
1 stick cinnamon
1. Cut the onion, tomato, garlic and ginger roughly and add all the ingredients to a pot.
2. Add 2 ltrs of water and bring to a boil. Then cook on a medium heat for 30-40 mins until the chicken is cooked. If you have more time you can simmer this for longer (a few hours) for more benefits and a better flavour. If your using organic chicken this may take longer and you will need more water.
2. Once the meat is cooked strain the broth through a sieve so you are left with the liquid.
3. Shred some of the chicken and add to the broth. Season with salt and freshly ground pepper and serve hot.
